This is a super easy...kid friendly...side dish!
My 6 year old always wants to help with dinner....so I'm always on the hunt for something that is easy for her to help with....this one is a great one for "little helpers." Yes...the potatoes were a little more "smashed" than I wanted...but they still tasted the same and she was excited that she made them!
You will need:
About 6-8 small potatoes (red or gold)...but small works best
Olive Oil
Fresh Herbs (if you feel like it)
Salt & Pepper
Wash all the potatoes and boil them until they are fork tender.
Drizzle a couple of tablespoons of Olive Oil on a cookie sheet and lay out the potatoes.
Next is when your "little helper" comes in handy....Use a potato masher and gently "smash" all the potatoes. Don't destroy them like we sort of did....Just lightly smash them!
Drizzle a little more olive oil onto the top each potato, add some fresh herbs and salt and pepper to taste.
Put the cookie sheet back into a preheated 450 degree oven and roast the potatoes until they are well browned and sort of "crunchy"...about 30-40 minutes.
Of course I forgot to take a picture of the finished product...but just picture yummy...crunchy potato skins on the outside with smooth, silky potatoes inside!
